Wesley Tomazini - Sítio Tomazini
about the region.
Brazil is by far the world’s largest coffee producing country - growing more Arabica than the next 7 largest producers combined. For the most part Brazil is known for classic, crowd pleasing taste profiles - think chocolate and nuts, full bodied and smooth. While consistent larger lots have made Brazilian coffee the centrepiece of menus, in recent years exciting microlots have redefined the best of Brazil.
Some of the best examples come from the small coastal region of Espírito Santo. The unique micro-climate here is particularly mild and ideal for high quality Arabica production due to the proximity to the ocean, rugged terrain and isolated mountains and myriad of waterfalls. Farm sizes are much smaller here than in other parts of Brazil, encouraging producers to pursue maximum quality and yield of their crop, selectively picking ripe cherries and fine-tuning their processing methods.
about the farm and producers.
Castelo is a city about 150km inland from Vitória, the capital of Espírito Santo. The population is mainly of Italian descent and one of the residents, Thomas Tomazini decided to work with coffee in the region in the 1990s. This decision began a family journey that spans several generations and has created some of the most exciting coffees from this part of Espírito Santo.
The next chapter of the story takes place in the early 2000s when Cleosiomar Tomazini, an agricultural technician, turned the family focus towards the specialty coffee market. He introduced innovative techniques for the time, pulping the cherries to reduce over-fermentation during drying, and employing machinery and greenhouses to further control the post-harvest processing. Cleosiomar began these practices on the family property, which today serves as a model for the local farmers.
Today, the Tomazini family has grown significantly, and many members have developed their own small farms in the same region and community. This lot was produced by Wesley Tomazini, one of the new generation of the family. Beautifully, the family supports each other, forming a unit dedicated to excellence. Over the years, they have actively participated in local competitions and now the Tomazini family are collectively recognized as the largest winner of coffee competitions in Espírito Santo.
about the coffee.
Sítio Tomazini is located between 1000-1200 metres above sea level. Wesley cultivates the Catuai varietal, a cross between Caturra and the very popular Brazil varietal Mundo Novo, Catuai is known for good cup quality and has been a favourite in Brazil for more than half a century.
This lot was processed as a pulp natural, meaning the seeds are separated from the skins before drying, maintaining high sweetness and body while reducing the risks of over-fermentation. The Espírito Santo micro-climate, catuai varietal, selective picking and careful processing combine to introduce a complex fruit quality to the classic sweetness and body that that Brazilian coffee is known for.
