Meselech Tube - Shantaweyne

Meselech Tube is an exceptional coffee farmer rooted in the picturesque landscapes of Bensa Sidama. Shantaweyne is a 3.5-hectare farm, which she inherited from her father in the 1980s and is truly a family operation with 3 of her children working alongside her. It is unusual to see single estate coffees from Ethiopia and Shantaweyne is a testament to Meslech Tube’s deep commitment to coffee cultivation and producing world renowned specialty coffee. Over the years, she has transformed this land into a thriving source of high-quality coffee, blending tradition with meticulous care.

Heirloom coffee varieties grow alongside other fruit and shade trees at Shantawene, creating healthy and regenerative soil. Organic farm byproducts in addition to manure from the farm livestock provide excellent natural fertilizers. All of this is paired with meticulous cultivation of the  plants, selective harvesting, and careful processing of the coffees using both natural and washed methods.

For this washed lot Meselech’s coffee processing begins with the careful handpicking of ripe, red cherries—a process that ensures only the finest are selected. Once harvested, the cherries undergo an additional round of manual sorting to remove any less dense ones, guaranteeing a clean and sweet profile.

The chosen cherries are then fermented and washed to remove fruit material from the parchment before being laid out on African raised beds, where they bask in the sun’s warmth. These elevated drying platforms promote optimal airflow, ensuring even drying while preventing mold, fermentation, or decay. Meticulously turned at regular intervals, to ensure the most even drying. The result is a sweet and clean cup with complex acidity and tea-like clarity.

This filter profile showcases this sweeter version of the classic washed Sidama profile. This cup is bright and sweet, with dominant nectarine and peach, sweet mandarin orange and bright fresh currants. The mouthfeel is juicy when hot and silky as it cools, with a pleasant black tea finish.
